Hotpot is a style of cooking/dining where a simmering pot of broth sits in the center of the table, and everyone cooks their own ingredients—like thinly sliced meat, seafood, vegetables, tofu, and noodles—right in the broth. You dip the cooked food into sauces and eat it fresh, straight from the pot.
Hotpot is most closely associated with China, especially regions like Sichuan and Chongqing, where spicy, numbing broths (with chili and Sichuan peppercorns) are popular.
Its origins go back over 1,000 years to the Han Dynasty, when people used simple pots to cook food at the table—especially in colder regions.
